Sweet Gingersnap Cookies // Recipe


Hey lovelies! Christmas is my favourite time of year for Baking and since we're officially in December now it's time to kick-start the month with a cosy sweet treat to get you through the festive season. These ginger-snap cookies are a recipe that always reminds me of family and Christmas memories. They're packed with warming spices, cinnamon and nutmeg and are soft and chewy while still having that traditional 'snap' that I love. 
In terms of baking, these cookies are super easy just make sure to give them plenty of space on the baking sheet as these little guys spread out like crazy. I've made the mistake of putting them too close together before and they've all baked into each other oops! YOU WILL NEED:  (MAKES ROUGHLY 12 COOKIES)


  • 250g Butter 
  • 2 Cups of Plain Flour
  • 1 Cup of Brown Sugar
  • 1/2 Cup of Golden Syrup
  • 2Tbsp of Ground Ginger
  • 1 Tsp of Cinnamon 
  • 1 Tsp of Baking Powder

METHOD:


1. Preheat the oven to 160°c and line a baking tray with Parchment paper. 
2. Add the butter and sugar in a large mixing bowl and beat together until the mixture becomes soft and creamy. Add the golden syrup and stir well. 
3. Using a sieve, add the flower, ground cinnamon and ginger to the mix. Stir to form your cookie dough and feel free to add more ginger depending on your taste. 
4. Use a tablespoon to scoop out the dough and roll into lots of small balls. Place spread out on a baking tray (these expand a lot so you don't want them melting into each other!) and press to flatten slightly but not completely. Bake in the oven for 20-25mins.
6. Once cool, make a simple icing by combining Icing Sugar with a few drops of water (the easiest icing to make.) Then drizzle this on top of the cookies and enjoy.

  6. Um, YUM! I love ginger ANYTHING and now is the perfect time to enjoy it all! *drool*

    I've just rediscovered molasses so I might do a little tweaking and try to incorporate it into this recipe. Yum!
