Strawberry and Almond Bakewell Tart // Recipe!


Hey lovelies, welcome back to another recipe post - and for once this isn't a super healthy vegan one! Summer is all about relaxing and indulging and so a little dessert recipe like this was too good not to include on my blog. 

For Summer this Strawberry and Almond Bakewell Tart is absolutely perfect, and I love recreating classic English 'school-dinner' desserts like this Tart and changing it up. For this recipe I used fresh strawberries instead of cherries, since my dad has grown masses of them this month, and I actually think I prefer it this way! Saying that though, the recipe can be used as a base for whatever seasonal fruit is best (I'm thinking pears, peaches.... mmm.) YOU WILL NEED: 


  • 500g pack shortcrust pastry
  • 6 tbsp of strawberry jam
  • 700g english strawberries (hulled and halved)
  • 50g flaked toasted almonds
Filling:

  • 100g butter
  • 100g golden caster sugar
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1 lemon (zested)
  • pinch of sea salt
  • 100g ground almonds
  • 1 tbsp plain flour


METHOD:


1. Heat the oven to 190C. Roll out the pastry on a lightly floured surface and use it to line a 23cm tart tin. Prick the base with a fork and line the tart with parchment and baking beans. Bake for 20mins or until the sides are set and the pastry is golden. Then, carefully remove the parchment and beans and place the tart case back in the oven for 15-20 more minutes until the base is biscuity and leave to cool. 

2. Make the filling  by combining the butter and sugar in a bowl and beating until soft and fluffy. Add the egg, vanilla, lemon zest and sea salt and mix well. Then, stir in the ground almonds and flour until everything is evenly mixed

3. Spread 4 tbsp of the strawberry jam over the cooled pastry base, and pour the almond filling over the jam. Arrange the strawberries on top cut-side down and push them into the filling.

4. Bake for 40-50 mins until the filling has puffed up and set around the strawberries, and then leave to cool.
5. Meanwhile, gently heat the remaining jam with 1 tbsp of water until runny. Brush the top of the tart with this jam glaze, sprinkle the flaked almonds on top, and serve.

  3. OMG I love any kind of pie or tart!! I don't actually like almonds much, but this doesn't seem like it would be too almondy. Your finished tart looked so yummy :) x

  7. I love bakewell tarts but I'm not too keen on cherries where as strawberries are my favourite fruit so this sounds absolutely perfect for me! Thanks for sharing this recipe I definitely want to try it out!
