Zingy Lime Squares // Vegan Recipe!




Hey lovelies! Long time no see - I know, but with Exams and my work experience last week I've been so behind and sadly had to put blogging on the side for the last couple of weeks. Anyways, I'm back now and in the time leading up to Summer (I can feel everyone counting down the days too!) I've been experimenting lots this month with Summery recipes and cute picnic treats and so in this post I thought I'd share one of my favourites so far: Zingy Lime Squares.These little bars are gorgeously citrusy, with a nutty-oat crust and creamy lime topping made from all Vegan ingredients and I'm obsessed. The ingredients are super simple and the whole recipe is essentially a tray-bake so perfect for whipping up for a Summer's Day. They can also easily be redone with lemon also if you prefer, so let me know what you try at home too.


FOR THE LIME SQUARES (MAKES ROUGHLY 12 SQUARES)
Crust:
  • 1 Cup of Rolled Oats
  • 1 Cup of Almonds
  • 1 Tsp Sugar
  • 3-4 Tbsp of Melted Coconut Oil
Filling:

  • 1 Cup of Soaked Cashews
  • 1 Cup of Coconut Cream (the hardened part of a can of coconut milk)
  • 1/2 Cup of Lime Juice
  • 1 Tsp of Lime Zest
  • 2 Tbsp of Cornstarch (to help it set)
  • 1/4 Cup of Maple Syrup 


METHOD:


1. Preheat the oven to 180°C and line an 8 x 8 Baking dish with parchment paper. In a blender, add the oats, almonds, and sugar and pulse until it reaches a crumb-consitency for your base. Now, gradually add in the Coconut Oil just until a loose dough is formed and the mixture sticks together without crumbling. 

2. Pour the base onto the baking tray and spread out, packing tightly with the back of a spoon until it's spread evenly. Bake for 15-20 mins in the oven, or until the crust goes a golden brown colour. 

3. Meanwhile, in the blender combine all the filling ingredients and blend until smooth and creamy. Give it a taste and add more lime juice / syrup depending on how sweet you want the filling to be, my favourite is when it is super citrusy!

4. Then, once the baked base has cooled, pour the filling over the crust in an even layer. Pop back into the oven for 18-25mins again and until the filling looks soft but no longer liquidy. 

5. Take the tray out and leave to rest for 10mins before putting in the fridge for 2-3 Hours to properly set. Then you can slice into small squares, add a slice of lime on top and enjoy.
