Dark Chocolate and Gogi Berry Brownies // GF and Healthy!


Hey lovelies, how are you all doing? It's been a busy week but I'm finally back again with another post, and this time it's a recipe I've been obsessed with making lately: My Dark Choc and Gogi Berry Brownies! Everyone loves a rich, fudgy style brownie and this recipe incorporates all of that chocolate-y decadence while still being relatively healthy - with no refined sugar or butter, and instead filled with natural raw sweeteners like dates, honey and vanilla. It's the perfect sweet treat for any day and if you've never tried gogi berries yet, the special lil superfood ingredient in this recipe, you totally need to, here's your excuse.

FOR THE BROWNIES

  • 1/2 Cup of Gluten Free Rolled Oats
  • 1/2 Cup of Dark Cocoa Powder
  • 1 Egg
  • 1/4 Cup of Raw Honey
  • 1 Tsp of Sea Salt
  • 1 Tsp Vanilla Extract
  • 1/2 Cup of Coconut Oil
  • 1/4 Cup of Almond Milk
  • Handful of Mixed Berries + Chopped Dates, Almonds and Dried Gogi Berries


METHOD:


1. Preheat the Oven to 180°C and line a baking dish with parchment paper. Blend the Oats in a food processor until resembling flour (or if you prefer, the oatier texture like me, just leave it as it is!)

2. Add the oat flour and cocoa powder to a large bowl. Whisk together the egg, honey, vanilla extract, milk and coconut oil until smooth, and then add into the large bowl with the dry ingredients to combine. Also add the chopped berries and nuts, stirring gently to avoid all those squished berries. 

3. Pour the brownie mix into your baking dish and sprinkle with dried gogi berries and sea salt, before popping into the oven for 18-20 mins. 

4. Once cooled, slice into brownie squares and enjoy!

  2. I like how you incorporated goji berries into your brownies, along with the fact that the ingredients are great alternatives to the traditional brownie mix. Love how it turned out!
