What I eat in a Day // Vegan Edition!

Hey lovelies, and welcome back! You might remember from my twitter and Vegan Snack Box post here, that a little while ago I tried going Vegan for the week. It was so much tougher than I thought it would be (No eggs, milk, fish, butter, honey...) and of course all that leftover Christmas Chocolate in the cupboard? Nope not allowed that either! It really did test my self-control though, making me feel naturally a lot healthier from what I was putting into my body, and I managed to stick to it after all.

Anyway, a post I've always wanted to make is a 'WHAT I EAT IN A DAY' and I thought out of all the weeks, why not do it from a day in my Vegan Week to change things up a bit. In general I'm always known as 'that healthy friend' in my group and I guess that's true, but for my Vegan week I ended up being even more healthy just because there was no temptation from other non-vegan things I would usually have- so bear that in mind as you read through! It was a busy day, from gym in the morning to trying to find vegan lunch places to eat out in the afternoon (which was surprisingly hard,) but hope you enjoy reading through my first ever What I Eat in A Day and let me know in the comments whether you'd like to see another soon. Looking forward to seeing how this one goes down!

Sunday 28th January...

8AM - Gym

Although this isn't how every morning starts for me (ahh I wish!) this day I dragged myself out of bed for the gym in the morning. I was staying with my grandparents and they actually had a spare guest pass to their posh lil club so I got to go to the most gorgeous gym ever compared to my one at home. If you hate the gym you will be baffled by how I can be so excited about a new gym, but I was buzzing after haha.

10AM ish
Post-Gym Snack: Graze Punchy Protein Nuts

I'm a big breakfast person, but often waking up so early in the mornings I feel like I can't stomach anything at all, so I ended up taking these Graze Protein Nuts on the way out the door to eat after my workout. I spend an hour or so at the gym and then munched on these on the way back and it was just enough to keep me going after the gym until I got home.

10:30AM
Breakfast: Almond Milk Porridge with fresh fruit + A Lemon Water

And then, when I finally had enough time it was Breakfast. I made my usual bowl of porridge that day (1/2 cup of oats with water and almond milk) and then topped with whatever fresh fruit my grandparents had in the house. Oh and some cashews too, because damn there was no peanut butter in the cupboards! I actually loved having almond milk in my porridge that week, I feel like it gave it an even nicer flavour than normal milk so I might even continue buying it now the week's over.

2-3PM
Lunchtime - Vegan House Fries and Oat Milk Hot Chocolate

Wow it's hard to find Vegan Cafes in London, especially ones that are actually decently priced! So when my friend and I found this cute one: 'Cafe Van Gough' in Brixton I was so happy. I could go on and on about the adorable interior of this cafe but it's the food I meant to be rambling about in this post so: I ordered from the menu the fries and an oat-milk hot chocolate and my friend ordered the Vegan 'bangers 'n' mash' which I stole lots of off her plate because it was so good!

6PMish
Dinner - Cauliflower Cous Cous Bowl

For dinner, I used some leftovers from the week I had, this Vegan cauliflower curry sort of thing. I wish I could remember the recipe to link but it was the simplest thing to make, literally all the ingredients were was 1 Cauliflower, Canned Tomatoes, 1 Onion, and some mushrooms and I ate it with some cous cous and green beans. I also had one of my vegan cereal bars from my nutribox after this too, but I forgot to show it!

QOTD: ARE YOU A VEGETARIAN, VEGAN OR MEAT-EATER?
I'm pescatarian!

  10. I LOVE how you done a week vegan! I’ve been Veggie for about 3 years now and went Vegan for a week 2 weeks ago (tried to do it for the whole of lent but failed) and I felt amazing after it too but it’s just so hard, so much control and dedication is need. I love how you lay things out in your blog and it’s giving me so many ideas of my own (which I just started today!) Keep up the good work!! Xo
