Vegan Lunch Box Ideas // Bento Style!


Hey lovelies! So it's Week 3 of my Summer Roadtrip and I am typing from Switzerland ahh! It feels so strange being in a different country every time I put a new post up but I'm loving it haha. Anyway, a couple of weeks ago I started seeing so many youtube videos, blog posts and pinterest boards on my newest obsession: Bento Boxes. These are originally from Japan but as well as being a super cute way to organise and display your food, they're actually really practical for taking to work and school and since it's been forever since I last did I foodie post, today I thought I would show you three healthy vegan lunchbox ideas I put together. You can buy actual bento boxes here, but since I don't own any yet I just had to work with what I had using these three containers that's compartments looked like the bento boxes. Even though I don't want to say the dreaded words *back to school* since it's the middle of Summer for most of us including me, I hope this gives you a little inspo for school lunches when you go back!


Lunch Box No.1

  • Fresh Pesto and Rice Salad
  • Graze Protein Bites
  • 2x Chocolate Chia Balls
The Rice Salad:
1) Boil 1 cup of Rice for 7 mins, then add in 1/2 a cup of chopped cucumber and red bell peppers, 1/4 cup of spinach, and 1 Tbsp of Pesto.
2) Add chopped coriander and sprinkle with salt and pepper.
2) Toss them all together in a bowl and spoon into container

Chocolate Chia Balls:
This is a Summer easy recipe which you can click HERE to read my post on. The main ingredients are, cacao powder, chia seeds, oats, and dates but the full post is on my blog.

Graze Protein Bites:
The perfect pick-me-up for work and school. You can buy these from the graze website in packs of 4 or just from your local tescos. I'm pretty sure I've raved about these enough in my July Love List!



Lunchbox No. 2

  • Blackberry and Pine Nut Leaf Salad
  • Wholewheat Pitta Slices
  • Gingerbread Granola

Blackberry and Pine Nut salad:
1) Chop fresh rocket (I used some fresh from my garden!) red peppers, and cucumber and add to a bowl.
2) Add pine nuts , pumpkin seeds and whatever other seeds or nuts you prefer along with a handful of blackberries.
3) To make the dressing mix 1 tsp of Olive Oil with 1 tsp of Balsamic Vinegar and shake until it's all combined. Then pour  the dressing into a little pot and add to the lunchbox, ready to add to your salad later on. 

Pita:
To get all my carbs in (because who can live off just plain salad all day haha) I added slices of wholewheat pitta to one of the compartments. Even better if they're toasted!

Gingerbread Granola:
1) In a bowl stir 2 cup of rolled oats, 1 cup of almonds, pumpkin and chia seeds, 2 tbsp of Ginger Powder and 1 tbsp of Cinnamon. 
2) Then stir in 1/4 Cup of Olive oil and 1/4 cup of Maple Syrup until everything is evenly coated.
3) Spread onto a backing tray and put in the oven at 160 °c for 12 minutes or until golden brown, shaking the tray every 3 mins to make sure it doesn't burn.
4) Add a handful to the compartment and enjoy! One of my favourite recipes.


Lunchbox No.3
  • Tomato and Rosemary Pasta
  • Banana with Almond Butter Dip
  • Blackberry and Coconut Fruit Mix

Tomato and Rosemary Pasta:

01) Chop half an onion, 1/4 cup of Red Bell peppers, and a handful of fresh cherry tomatoes (the sweetest ones!) to make your sauce.
02) Saute the onion on a low heat, then stir in the rest of the ingredients along with 2 Tbsp of Tomato Puree and a handful of rosemary.
03) Cook your pasta then spoon your sauce over it, sprinkled with some more fresh rosemary for even more flavour!

Banana and Almond Butter Dip:

This is one of my favourite snacks and by using almond butter instead of peanut butter it's actually much healthier since it contains more fibre and lower in sugar. If you haven't tried this combo yet you need to!

Blackberry and Coconut Fruit Mix:

For this compartment I just threw in some fresh blackberries and something I have been loving lately... frozen coconut! I buy these frozen chunks from my local supermarket and they're great 'hand-food' for fruit mixes like this or even to toss into smoothies.

  4. These all look so yummy! I'm definitely going to try the chocolate chia balls. My dad and I have decided to go vegan and so these will be perfect for when I go back to sixth form in September ❤

  5. So much thought has gone into this post, I love it! I have been thinking of lunch ideas to prep as I want to stick to a healthier eating plan than I am doing currently. I want to start being more creative with my meals.

  7. I could use some lunch box ideas coz I always end up with a boring pasta and tomato sauce and an apple for dessert. how sad. These ideas will make my lunch happier ahah
