Fresh Rhubarb and Ginger Cordial // Recipe


Hey lovelies! Hope you are all having a fabulous weekend and enjoying yourself! I couldn't resist posting again this week, and I thought it's about time I do another recipe post for you. I've made this simple summer-y Rhubarb and Ginger cordial a few times now and I still cannot get over how refreshing and sweet it is especially in the summer (Although right now, we'll be lucky to see even a little bit of sun here in England hehe!) The actual flavour of the cordial is totally customisable, I was just inspired to give it a go when I picked huge amount of fresh rhubarb from my garden and had no idea what to do with it because as much as I do love Rhubarb Crumble, it's definitely more of a Winter thing! Read on then, for the Fresh Rhubarb and Ginger Cordial recipe.

You will need: 


  • 100g Fresh Rhubarb (I used homegrown stuff!)
  • 3 slices of Ginger
  • 1  Cup of Water
  • 3/4 Cup of Caster Sugar
  • 1 tsp of Vanilla extract
  • A large Sauce pan
  • An airtight bottle to store the cordial

01. Chop the rhubarb roughly and boil in water for a few minutes until soft. (This is just to make the next few steps quicker!)

02. Drain the water from the pan and add the ginger, water, sugar and vanilla.

03. Let the liquid simmer for 2-3 minutes then cover and put on a low heat for 20 minutes, stiring occasionally.

04.The rhubarb should be extremely soft and part of the syrup by now, so  take the saucepan off the heat and leave to sit for 1 hour, (This basically just makes sure the rhubarb and ginger flavours are properly infused in the cordial!)

05. Put the cordial through a sieve to separate the liquid from the... well mush hehe! Pour into an airtight bottle, I used a Kilner one

06. Now just serve with ice, water and a sprig of mint, and enjoy your fresh summer cordial!
