Fruit-Basket Cake! | Recipe


Hello again! I'm back this week with another Baking post which I hope you'll enjoy! This weekend I 
had a lovely little Birthday Celebration, with a group of friends. We spent the afternoon in a sweet Coffee Shop, spent ages taking funny pictures at the park, and then had your typically girly sleepover back at my house haha!  I also helped make and ate my Birthday cake this weekend (Mostly ate though hehe!) My Mum loves to bake-which is probably why I like it so much too-and so our B'day cakes are always homemade. When I was little, I used to just draw her a scribbly design in crayons of my dream birthday cake- and somehow she'd manage to make an amazing one for me each year! I love helping with them and wanted to share the recipe with you all for Birthday Cake inspiration I guess?


  • You will need:
    175g of Soft Butter
    175g Golden Caster Sugar
    3 Large Eggs
    225g of Self-Raising Flour
    1tsp of Baking Powder
    2tsp Vanilla Extract
    142ml Carton Sour Cream
    A Punnet of Blueberries.

    For The frosting:
    200g Tub of Philidelphia Cheese
    100g of Icing Sugar

    To Decorate:
    3 Boxes of Quality Street Matchmakers
    A Punnet of Strawberries and Blueberries
    A Few Mint Leaves

1. Preheat the oven to 160c and line the base of a 22cm round cake tin with non stick baking paper.

2. Put the butter, sugar, eggs,flour, baking powder and vanilla in a bowl. Beat with a wooden spoon for 2-3 minutes, or with a hand electric beater for 1-2 minutes, until lighter in colour and well mixed. Beat in 4 tbsp soured cream, then stir in half the blueberries with a large spoon.

3. Tip the mixture into the tin and spread it level. Bake for 50 minutes until it is risen, feels firm to the touch and springs back when lightly pressed. Cool for 10 minutes, then take out of the tin and peel off the paper or lining. Leave to finish cooling on a wire rack, beforSandwitching the cake with Blueberry jam.

4. To make the frosting, beat the soft cheese with the icing sugar and the remaining soured cream in a bowl until smooth and creamy. Spread over the top of the cooled cake.

5. Pile the fruit on top of the cake and then line the matchmaker sticks along the outside of the cake carefully. Garnish with mint leaves and your cake should look almost like a 'fruit basket.' Enjoy!







Hope you liked this post! This is probably my favourite birthday cake so far, I just love the Blueberry muffin style texture of the cake, the semi-sweet cream cheese icing, the pile of fruit and fresh mint....
better stop myself now before I end up eating even more haha!
